Spicy Black Bean Chili

Ingredients

  • 2 c dry black beans
  • 12 c water
  • 1 large onion
  • 8 cloves garlic
  • 2 T canola oil
  • 2 T chili powder
  • 2 t ground cumin
  • 2 t dried oregano
  • 1 t paprika
  • 1/2 t salt
  • 1/2 t ground red pepper
  • 8 c vegetable broth
  • 1 14oz can diced tomatoes
  • 1/2 c water
  • 1/2 c sour supreme
  • fresh cilantro

Directions

  1. Soak, rinse, and cook beans. Cook onion and garlic in pot until tender. Stir in spices and herbs and cook another minute. Add beans, broth, undrained tomatoes, and water. Bring to a boil; reduce heat. Cover and simmer for 1 1/2 hours. Serve with rice, cornbread or biscuits.
