Buttermilk Biscuits

Ingredients

  • 3.5 C Fresh ground spelt, kamut, or whole wheat flour
  • 1 C Buttermilk
  • 4 T Melted butter
  • 1.5 t Sea Salt
  • 2 t Baking Soda
  • unbleached white flour

Directions

  1. eheat oven 350.

  2. Mix flour with buttermilk to form a thick dough, cover and leave in a warm place 12-24 hours.

  3. Place in food processor and knead for several minutes.

  4. Blend in remaining ingredients (except flour).

  5. Roll out to 3/4" thickness using flour to keep dough from sticking.

  6. Cut biscuits and place on greased baking sheet.

  7. Bake 40 minutes.
