Bean Burgers

Serves 8 people

Ingredients
- 2 T canola oil
- 2 large onions
- 2 garlic cloves
- 2 t coriander
- 2 t cumin
- 8 oz white mushrooms, finely chopped
- 2 15 oz cans pinto or kidney beans (or 4 c cooked beans)
- 4 T chopped fresh parsley
- white flour
- salt and pepper
- hamburger buns
Directions

Cook onion until softened, 5 minutes. Add garlic, coriander, and cumin and cook for another minute. Add mushrooms and cook 4-5 minutes, stirring, until liquid is evaporated.

Mash beans in a small bowl. Stir in mushroom mixture and parsley and season with salt and pepper.

Divide into 8 portions, dust with flour, and shape into patties. Brush with oil. Cook under medium-high broiler for 4-5 minutes on each side.
