Green Beans with Pine Nuts

Serves 8 people
Ingredients
- 2 T olive oil
- 1/3 c pine nuts
- 1/2-1 t paprika
- 1 lb green beans
- 1 small onion
- 1 garlic clove
- 1 lemon
- salt and pepper
Directions

Trim beans. Bring pan of water to boil, add beans, and cook for 5 minutes. Drain well.

Heat oil in large heavy skillet over medium high, and the pine nuts, and cook stirring constantly for 1 minutes until golden brown. Drain on paper towels and toss with paprika.

With remaining oil on medium, add the onion and cook 8-10 minutes until soft. Add garlic and cook additional minute.

Add the beans to the skillet, tossing with onion, and cook 2-3 minutes. Season with salt and pepper.

Turn into serving dish. Sprinkle with lemon juice, toss, and sprinkle with pine nuts.
