Cashew Chicken

Ingredients

  • 1 Lb chicken (or beef)
  • 4 TBSP veg oil, divided
  • 3 TBSP cornstarch
  • 1c. water
  • 3 TBSP soy sauce
  • 2 tsp sesame oil
  • 2 tsp oyster sauce
  • 2 tsp Chinese chili sauce or paste
  • 16 green onions, chopped
  • 4 cloves garlic, minced
  • 2/3 c. roasted cashews

Directions

  1. Cut meat into thin slices 2" long.

  2. Heat 2 TBSP oil in skillet over high heat. Fry meat till brown, then remove and set aside.

  3. Combine cornstarch, water, soy sauce, sesame oil, oyster sauce, and chili sauce in small bowl; mix well.

  4. Heat remaining 2 TBSP oil. Add onions, garlic, and cashews – stir fry 1 minute. Stir cornstarch mixture and add to skillet with meat. Cook and stir until liquid boils and thickens. Serve over rice.
