Scalloped Potatoes and Ham

Ingredients

  • 6 medium potatoes (2 lbs)
  • 3 Tbsp margarine
  • 1 small onion (finely chopped)
  • 3 Tbsp Gold Medal all-purpose flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 1/2 cups milk
  • 1 1/2 cups diced cooked ham
  • 1 Tbsp margarine

Directions

  1. Heat oven to 350 and grease 2 quart casserole dish.

  2. Cut potatoes into enough think slices to measure about 4 cups

  3. Melt 3 Tbsp margarine in 2-quart saucepan over medium heat. Cook onion in margarine about 2 minutes, stirring occasionally, until tender.

  4. Stir in flour, salt and pepper

  5. Cook stirring constantly, until smooth and bubbly

  6. Remove from heat

  7. Stir milk into sauce. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in ham.

  8. Spread potatoes in casserole. Pour sauce over potatoes. Dot with 1 Tbsp. margarine.

  9. Cover and bake 30 minutes. Uncover and bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender.

  10. Let stand 5 to 10 minutes before serving.
