Mango Salsa

Ingredients

  • 2-4 mangoes, diced
  • 1 Roma tomato, diced (optional)
  • 1/2 jalapeno pepper stemmed, seeded, and chopped (or amount to taste)
  • finely chopped cilantro &/or parsley leaves
  • freshly squeezed lime juice
  • juice of one orange
  • 1 small avocado, diced (optional)
  • 1/2 small red bell pepper, diced
  • 1/2 small red onion, diced
  • Kosher salt and freshly ground black pepper to taste

Directions

  1. Place all ingredients in mixing bowl; gently fold together until evenly mixed. Refrigerate, covered for up to 3 days.
