Sweet and Sour Party Slaw

Ingredients

  • 6 cups shredded green cabbage (about 1 1/2 pounds)
  • 2 cups shredded red cabbage
  • 1 cup shredded carrot (use large-holed grater)
  • 1/2 sweet onion, peeled
  • 1/4 cup fresh chopped parsley
  • 1/4 cup cider vinegar
  • 3 tablespoons granular Splenda (or 4 Splenda packets)
  • 3 tablespoons virgin olive oil
  • 1 tablespoon creamy mustard (like Dijonnaise)
  • 2 teaspoons celery seed
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon salt
  • Pepper to taste

Directions

  1. Place cabbages and carrot in a large bowl. Quarter onion lengthwise. Cut into thin slices, making long, thin slivers of onion. Add to bowl. Toss in parsley. In a small bowl, whisk together remaining ingredients. Pour over slaw and toss. Chill before serving.
