Sweet and Sour Party Slaw

Ingredients
- 6 cups shredded green cabbage (about 1 1/2 pounds)
- 2 cups shredded red cabbage
- 1 cup shredded carrot (use large-holed grater)
- 1/2 sweet onion, peeled
- 1/4 cup fresh chopped parsley
- 1/4 cup cider vinegar
- 3 tablespoons granular Splenda (or 4 Splenda packets)
- 3 tablespoons virgin olive oil
- 1 tablespoon creamy mustard (like Dijonnaise)
- 2 teaspoons celery seed
- 1/2 teaspoon minced garlic
- 1/2 teaspoon salt
- Pepper to taste
Directions

Place cabbages and carrot in a large bowl. Quarter onion lengthwise. Cut into thin slices, making long, thin slivers of onion. Add to bowl. Toss in parsley. In a small bowl, whisk together remaining ingredients. Pour over slaw and toss. Chill before serving.
