Layered Enchilada Casserole

Ingredients

  • 1 can whole tomatoes (14-1/2 oz)
  • 1 small onion (cut into pieces)
  • 1 clove garlic, minced
  • 1/2 tsp ground red pepper
  • 1/2 tsp. salt
  • 1 can (6 oz.) tomato paste
  • 1 lb. ground beef, browned
  • 8 oz. shredded cheddar cheese (2 cups)
  • 9 corn tortillas

Directions

  1. To prepare sauce, blend tomatoes and their liquid with onion and garlic in a blender or foodprocessor

  2. Pour into medium sized saucepan.

  3. Add red pepper, salt and tomato paste.

  4. Heat to a boil

  5. Simmer for 5 to 10 minutes

  6. Place 3 tortillas in bottom of Crock-Pot

  7. Layer on tortillas 1/3 of the ground beef 1/3 of tomato sauce and 1/3 of the Cheddar cheese

  8. Repeat each layer two more times

  9. Cover and cook on low 6 to 8 hours
