Kelch Soup

Ingredients

  • 2-3 lbs lean meat (roast, round steak , or whatever is on sale)
  • 1 onion
  • 3-4 celery stalks
  • 1 12-oz can of tomatoes
  • 2-3 cans chicken broth
  • 1 can green beans
  • 1 bag frozen corn
  • 1 bag frozen baby lima beans
  • 4-5 medium potatoes
  • 4-5 carrots, sliced into thin sticks

Directions

  1. In large pot cover meat, celery and onions with several inches of water and simmer covered until meat is tender, about 1 ½ hours. Stir occasionally. Add more water if needed.

  2. Add tomatoes, broth, and green beans. Cook another ½-1 hour, simmering on low heat.

  3. Add frozen veggies, simmer again, and add carrots. Simmer for 5 minutes, then add potatoes. Season to taste with pepper.
  4. As soon as potatoes are tender and before they fall apart, turn off heat and serve.
