Ingredients
- 2-3 lbs lean meat (roast, round steak , or whatever is on sale)
- 1 onion
- 3-4 celery stalks
- 1 12-oz can of tomatoes
- 2-3 cans chicken broth
- 1 can green beans
- 1 bag frozen corn
- 1 bag frozen baby lima beans
- 4-5 medium potatoes
- 4-5 carrots, sliced into thin sticks

In large pot cover meat, celery and onions with several inches of water and simmer covered until meat is tender, about 1 ½ hours. Stir occasionally. Add more water if needed.

Add tomatoes, broth, and green beans. Cook another ½-1 hour, simmering on low heat.
- Add frozen veggies, simmer again, and add carrots. Simmer for 5 minutes, then add potatoes. Season to taste with pepper.

As soon as potatoes are tender and before they fall apart, turn off heat and serve.
