My husband’s favorite meal! I often use Trader Joe’s frozen bell pepper mix in place of fresh bell peppers here and substitute a can of diced tomatoes for fresh. Serve over rice.

Ingredients
- 1 Tbsp oil
- 2 onions, chopped
- 2 cloves garlic, crushed
- 1 tsp salt
- 1/2 teaspoon pepper
- 1 jalapeno pepper, seeded and chopped
- 1/2 lb chicken breasts, thighs, cubed
- 2 green bell peppers, chopped
- 4 tomatoes, chopped or 1 can diced tomatoes
- 2 cups chicken broth
- 3 Tbsp peanut butter
- 1/2 pound fresh spinach
Directions

Heat oil in a large stew pot over moderate heat; add onions, sauté until golden brown.

Add garlic, salt, pepper and hot pepper. Stir-fry 2 or 3 minutes; add chicken and bell peppers.

Fry stirring occasionally, until chicken browns on all sides.

Mash tomatoes with a fork and mix them into the stew, along with the broth.

Reduce heat, cover, and simmer 10 minutes.

Add the peanut butter with a few tablespoons of hot broth from the pot.

Add the peanut paste to the stew; continue simmering until chicken is well done.

Wash spinach and saute or steam until tender.

Serve greens with the stew.
