Tortilla Soup

Serves 6 peopleIngredients
- 28 oz chicken broth
- 14-oz can of Cajun style stewed tomatoes
- 3 Tb fresh lemon juice
- 3 cloves garlic
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 ground red pepper
- 1 1/2 c cooked chicken, cubed
- 1 c frozen corn
- 1 15-oz can black beans, drained
- 2 Tb half and half
- 1 green onion, thinly sliced
- Tortilla chips
- Shredded Mexican-blend cheddar cheese
Directions

Bring broth, tomatoes, lemon juice, garlic, chili powder, cumin, and red pepper to a boil.

Reduce heat and add chicken, corn, beans, half and half, and green onion.

Simmer 20 minutes.

Serve with chips, cheese, and more green onions.
