Carrot – Ginger Cupcakes with Spiced Cream Cheese

Ingredients

  • 1 pkg (16 oz) pound cake mix
  • 3/4 cup shredded carrots
  • 1 Tbsp. ground ginger
  • 1 tsp. ground cinnamon, divided
  • 1/2 cup walnut pieces, toasted
  • 1 pkg cream cheese softened
  • 2 cups thawed cool whip

Directions

  1. eheat oven to 350.

  2. Prepare cake batter as directed on package

  3. Stir in carrots, ginger, 3/4 tsp. cinnamon, and walnuts.

  4. Spoon batter into 24 lined muffin cups.

  5. Bake 15 mins or until toothpick comes out clean.

  6. Beat cream cheese with wire whisk until smooth. Stir in whipped topping. Spread over cupcakes.

  7. Sprinkle remaining cinnamon on top.

  8. Refrigerate until serving.
