Ingredients
- olive oil
- 3 lg cloves garlic - minced
- 4 scallions - chopped, green parts
- 2 1/2 cups chicken broth
- 1 tbl parsley
- 4 oz cream cheese
- 4 boneless chicken breasts
- 2 tbl flour
- 1/2 tsp salt
- 1/8 tsp pepper
Directions

In a saucepan, heat oil; add garlic and green onions, stirring/cook for a few more minutes.

Add chicken broth and bring to a boil, reduce heat and simmer for 5 min. Add cream cheese and parsley, set aside (stirring occasionally to disperse the cream cheese).

You can also thicken the sauce a bit using some corn starch and water (which you do while its boiling) or add about 1/2-3/4 cup less broth.

Wash/dry chicken and pound to a thin even thickness for even cooking. I let my kids do this in a ziplock baggie.

Combine flour with salt/pepper.

Dip chicken into the flour and set aside.

Heat olive oil in a frying pan.

Brown chicken breasts for exactly 3 minutes on each side (do not crowd).

Add cream sauce and simmer for about 10-15 minutes until done.

BTW…this recipe doubles nicely and exactly (double all ingredients) . Best served over rice with a green veggie (like peas or snap beans). :)
