Faux Cassoulet

Ingredients

  • 1 can each rinsed and drained black beans, white beans, and dark red kidney beans
  • 1 (14 oz) pkg. low-fat kielbasa, diagonally sliced into 1-inch pieces
  • 1 (15 oz) can tomato sauce
  • 1 1/2 cup carrots, thinly sliced
  • 2 small onions, thinly sliced and separated into rings
  • 1/2 cup low-sodium beef broth
  • 2 tbl. firmly packed light brown sugar
  • 1 1/2 tsp. dried thyme
  • 2 cloves minced garlic

Directions

  1. Heat oven to 375 degrees.

  2. Mix all ingredients in a 3- quart casserole. Cover and bake about 1 hour or until hot and bubbly and carrots are tender.
