Penne with Artichoke

Ingredients

  • 2 artichokes, can use hearts
  • 1 tsp lemon juice
  • 1 garlic clove
  • 2 tbsp olive oil
  • 1 tbsp parsley, chopped
  • 1/2 pound penne pasta
  • salt and pepper
  • Parmesan Cheese, grated (optional)

Directions

  1. Prep artichoke.

  2. Cut artichoke into quarters and place in bowl with lemon juice. Cover with water and leave to soak for 10 minutes.

  3. Peel and crush garlic.

  4. Heat the oil in saucepan. Drain artichokes and add to pan with garlic. Cook gently over low heat for about 10 minutes until tender, turning them several times.

  5. Add parsley and cook for another 5 minutes, stirring occasionally.

  6. Meanwhile, cook penne in boiling salted water until tender. Drain thoroughly and add to artichokes.

  7. Mix well to coat pasta with oil and parsley, adding lots of salt and pepper, then turn warm into a warmed serving dish.

  8. Serve hot with grated Parmesan cheese. (optional)
