Tamale Pie

Cook time: 40 minutes
Serves 6 people

Ingredients

  • 1 C chopped onion
  • 1 C chopped green pepper
  • 1/4 pound ground beef
  • 2 - 8 oz. cans seasoned tomato sauce
  • 1 - 12 oz. can whole kernel corn
  • 1 C chopped ripe olives
  • 1 Clove garlic, minced
  • 1 Tbsp sugar
  • 1 tsp. salt
  • 2-3 tsp chili powder
  • Dash pepper
  • 1 1/2 c shredded sharp process American cheese
  • Corn-meal Topper:
  • 3/4 c. yellow corn meal
  • 1/2 tsp salt
  • 2 C cold water
  • 1 Tbsp margarine

Directions

  1. Drain corn

  2. Cook onion and green pepper in a little hot fat till just tender

  3. Add meat

  4. Brown lightly

  5. Add next 8 ingredients

  6. Simmer 20-25 minutes until thick

  7. Add cheese

  8. Stir till melted

  9. Pour into greased 10 × 6 baking dish

  10. Make Corn-meal Topper:

  11. Stir corn meal and salt into cold water

  12. Cook and stir till thick

  13. Add butter

  14. Mix well

  15. Spoon over hot meat mixture in 3 lengthwise strips

  16. Bake casserle in oven 375 for 40 minutes
