Roasted Carrots

Serves 4 people

Ingredients

  • 1 lb carrots
  • 6 tbsp Italian dressing, divided

Directions

  1. Preheat oven to 450 degrees. Cut carrots into 1 1/4 inch thick slices. Place in foil-lined shallow baking pan. Toss with 2 tbsp of the dressing. Cover with foil.

  2. Bake for 20 minutes.

  3. Remove foil; stir. Bake an additional 20 to 25 minutes or until carrots are crisp-tender, stirring occasionally. Serve tossed with the remaing 4 tbsp dressing.
