Crispy-Topped Creamy Spinach

Ingredients

  • 2 10-oz packages frozen chopped spinach, thawed and well drained
  • 1 8-oz container Chive and Onion Cream Cheese Spread
  • 1/2 cup Ranch dressing
  • 2 eggs, lightly beaten
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 cup crushed Ritz crackers, divided

Directions

  1. Preheat oven to 375 degrees. Mix spinach, cream cheese spread, dressing, eggs and 3/4 cup of the cheddar cheese in large bowl. Stir in 1/2 cup of the crushed crackers.

  2. Spoon spinach mixture evenly into greased 2-qt ovenproof casserole dish. Sprinkle with remaining 1/2 cup crushed crackers and remaining 3/4 cup cheddar cheese.

  3. Bake 20 to 25 minutes or until heated through and cheese on top is melted.
