Mexican Pizzas

Ingredients
- 4 small flour tortillas
- 1/2 cup Canola oil
- 1/2 pound ground turkey (or ground beef)
- 1 package taco seasoning
- 1/2 cup water
- 1/4 cup diced onions
- 1 package Spanish flavored rice, cooked according to directions on package (or, white rice cooked per directions combined with 1/3 cup salsa)
- 1 can refried beans
- 1/2 cup salsa
- 1/2 cup shredded Mexican blend cheese
- 1/4 cup taco sauce
- 1 small can sliced black olives
- 1 small tomato, diced small
Directions

In a medium fry pan, heat approx. 2 Tbsp Canola oil to coat bottom of pan over medium heat.

Place one flour tortilla in the oil, and heat until golden, flip and heat until golden.

Remove from pan and transfer to plate with paper towel to absorb oil.

Add 2Tbsp Canola oil to the pan, and repeat process for additional tortillas. In same pan, brown the ground turkey (or beef).

Add onions and cook until translucent. Add taco seasoning and water, mix well, and cook until water is reduced and sauce is thick.

On a microwave able plate, place one crispy tortilla.

Top with 1/2 the ground meat mixture. Top with 1/2 the Spanish rice.

Top with ¼ cup salsa.

Place another crispy tortilla on top of the salsa.

Spread with 1/2 the refried beans. Sprinkle with 1/2 the black olive slices. Sprinkle with 1/2 the tomato pieces. Sprinkle with ¼ cup shredded cheese. Drizzle with 1/8 cup taco sauce. Microwave on high for 2 minutes, or until cheese is melted.

Repeat layering process to create second Mexican pizza.
