Chicken Salad with Grapes

Serves 6 people

Ingredients

  • 3-1/2 cups chicken, cooked
  • 1 large celery stalk, thinly sliced
  • 1/2 to 3/4 cup mayonnaise
  • 1 Tablespoon lemon juice
  • 2 Tablespoons chives, finely chopped
  • 1-1/4 cups red or green grapes, cut in half
  • salt and freshly ground black pepper
  • Pinch of cumin or curry powder (optional)

Directions

  1. In a large bowl, toss the chicken and celery.

  2. Gently fold in about 1/4 cup of the mayonnaise and the lemon juice.
  3. Add the salt, pepper, cumin or curry powder if desired, and parsley.

  4. Add more mayonnaise if you like a moister salad.

  5. Gently fold in the grapes.
