Fruit Cocktail Cake I

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbl. baking powder
  • 1 tsp. salt
  • 2 eggs
  • 1 (30 oz) can fruit cocktail, drained and syrup reserved
  • 1/2 cup dark brown sugar, plus 1/3 cup for topping
  • 1 tsp. vanilla
  • 1 cup chopped nuts
  • Sweetened whipped cream

Directions

  1. Preheat oven to 350 degrees.

  2. Combine flour, sugar, baking powder and salt in a large mixing bowl. Set aside.

  3. Measure and reserve 1/2 cup fruit cocktail syrup.

  4. In a small bowl, beat together eggs, syrup, 1/2 cup brown sugar and vanilla.

  5. Add egg mixture to flour mixture and mix well.

  6. Fold in drained fruit and nuts.

  7. Pour into greased 9×13-inch pan. Sprinkle 1/3 cup brown sugar over top of batter.

  8. Bake 50 minutes or until pick inserted in center comes out clean.

  9. Serve with whipped cream.
