Bacon-Wrapped Meat Loaf

Ingredients

  • 4 strips of bacon
  • 1 lb. lean ground beef
  • salt
  • Lemon Pepper
  • 1/4 cup grated Parm. Cheese
  • 2 oz. mushroom stems and pieces, drained
  • 1 tbsp. minced onion
  • 2 tbsp. finely chopped green bell pepper

Directions

  1. In a small skillet or microwave, cook bacon until limp, about 10 mins. Drain bacon on paper towel. Pat ground beef on waxed paper into a pan. Sprinkle lightly with salt and lemon pepper. Top with Parm. cheese.

  2. Combine mushrooms, onion, and bell pepper and sprinkle evenly over ground beef. Roll ground beef like a jelly roll, starting from the longest side. Wrap witha strip of bacon, securing with wooden picks Store in a bag. Label and freeze.

  3. serve, thaw, place meat loaf in a pan and cover. Bake 1 hr. at 350. Let meat loaf rest before cutting. Cut each slice between strips of bacon.
