Assam ribs

Ingredients

  • 650 prime ribs, mini belly or trotters
  • 2 1/2 tbsp. assam pulp (I use 4pcs dried assam)
  • 425 ml water
  • 5 tbsp. oil
  • 1 tbsp. salted bean paste
  • 2 lemon grass
  • 3 tbsp. palm sugar
  • salt
  • some chili sambal paste

Directions

  1. Fry paste about 8 mins.

  2. Add salted bean paste, pork, lemon grass and liquid.

  3. Simmer 45mins for ribs, 30 mins for mini belly till tender and gravy thickens.

  4. Can use pressure cooker.

  5. Stir in palm sugar and salt.

  6. Use sugar if needed.
