Feta and Herb Stuffed Shrimp

Ingredients

  • 4 oz crumbled feta cheese (I used reduced fat)
  • 4oz cream cheese, softened
  • 1 tablespoon finely chopped flat parsley
  • 1 tablespoon chopped green onions
  • 1 large clove garlic, minced
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon garlic salt
  • 1/4 teaspoon freshly ground black pepper
  • dash of Worcestershire sauce
  • dash of paprika
  • 20 -24 jumbo shrimp, peeled and deveined

Directions

  1. In a small bowl, combine the feta cheese, cream cheese, parsley, green onion, garlic, spices. Add a dash or two of Worcestershire sauce. Combine thoroughly.

  2. Cut shrimp along the back to butterfly the shrimp. Spread shrimp open and place a dollop of the cream cheese mixture in the shrimp. Place shrimp on baking sheet , cheese side up. This gets tricky so try and flatten the shrimp down as much as possible to prevent the cheese from falling out.

  3. Preheat the oven broiler and broil the shrimp 6 inches from the heat, until cheese is bubbly and shrimp is pink, about 4-5 minutes. Remove from the oven and sprinkle lightly with paprika.
