Flank Steak with Lime Marinade

We actually prefer this with Lemon juice.

Serves 4 people
Ingredients
- 1/3 C Fresh Lime Juice (about 4 limes)
- 2 T Soy Sauce
- 2 Scallions, thinly sliced (about 1/3 C)
- 2 T Minced Peeled Fresh Ginger
- 1/2 t Red Pepper Flakes
- 1.5 Lbs Flank Steak
- Oil (for grill)
- Coarse Salt & Ground Pepper

Combine first 6 ingredients. Marinate for 30 minutes.

Heat the grill to high.

Remove flank steak from the marinade (discard marinade) season with salt & pepper. Place steak on the grill; cover. Cook, turning once, 6-8 minutes for medium-rare.

Let the steak rest 10 minutes before slicing thin.
