Mango Salsa

Ingredients
- 1 Mango, peeled, seeded & diced
- 1/3 C finely diced Red Onion
- 3 Plum tomatoes, seeded and diced
- 1.5 t finely minced Garlic
- 1.5 T fresh squeezed Lime Juice
- 1 T finely grated Lime Zest
- 1 small Jalapeno Pepper (cored, seeded, & minced)
- 2 T fresh Parsley, coarsely chopped
- 1.5 t sugar (or to taste)

Best made day of serving.

In a glass bowl, combine all ingredients except parsley. Cover tightly with plastic and chill for 30 minutes-4 hours. Just before serving, add parsley and toss. Yields ~ 3 C.
