Broccoli Meat Roll

Ingredients
- 2 eggs
- 1/4 cup milk
- 1/4 cup ketchup
- 3/4 cup soft bread crumbs
- 1 1/2 teaspoons salt, divided
- 1/4 teaspoon pepper
- 1/4 teaspoon dried oregano
- 2 pounds lean ground beef
- 1 package (10 ounces) frozen chopped broccoli, thawed and drained
- 1 package (2 1/2 ounces) thinly sliced deli ham
- 3 slices mozzarella cheese, cut in half diagonally
Directions

In a large bowl, combine the eggs, milk, ketchup, bread crumbs, 1/2 teaspoon salt, pepper, and oregano.

Crumble beef over mixture and mix well.

On a piece of heavy duty aluminum foil, pat beef mixture into a 12 inch by 10 inch rectangle.

Cover with broccoli to withing 1/2 inch of edges.

Sprinkle with remaining salt.

Top with ham.

Roll up, jelly-roll style, starting with a short side and peeling foil away while rolling.

Seal seam and ends.

Place in a greased 13 inch by 9 inch by 2 inch baking dish.

Bake, uncovered, at 350 degrees for 1 1/4 hours or until meat is no longer pink and a meat thermometer reads 160 degrees; drain.

Top with cheese slices.

Bake 1 minute longer or until the cheese is melted.
