Fresh Fruit Compote

Ingredients

  • 1 1/2 Cups Diced Mango
  • 1 1/2 Cups Diced Strawberries
  • 1/3 Cup Brown Sugar
  • 1/3 Cup Rice Vinegar
  • 2 Tbsp Fresh Minced Ginger
  • 1/2 tsp Cardamom
  • 1 tsp Mint

Directions

  1. Mix sugar, vinegar and ginger in small saucepan over low heat until sugar has dissolved.

  2. Once dissolved add 1 cup of each fruit. Let simmer for 15 minutes then add cardamom and mint.

  3. Stir in the rest of the fruit and serve over fish or chicken.
