Ingredients
- 1 can black beans (I like Bush’s brand)
- 2 Tbsp. olive oil
- 3 Tbsp. chopped yellow or white onion
- 3 Tbsp. chopped red bell pepper
- 2 cloves chopped garlic
- 3 Tbsp. chopped tomato
- 1 tsp. cumin
- 2 tsp. oregano
- Salt
- Pepper
- 4 fried eggs
Directions

Saute the onion, red bell pepper, and garlic in the olive oil over medium-high heat for about 5 minutes. Add tomatoes and saute for about 1 minute.

Then, add the can of beans, juice and all. Season with cumin, oregano, salt, and pepper.

Simmer over medium heat for 10 minutes, stirring occasionally, until some of the bean juice has evaporated.

Serve immediately, with the eggs on top of the beans.
