Ingredients
- 2 tsp olive oil
- 1 cup chopped onion
- 1/2 cup diced celery
- 1/2 cup green pepper
- 3 clove garlic, minced or chopped
- 2 cup vegetable broth
- 3 cups sweet potatoe, peeled, cubed
- 1 can stewed tomatoes, not drained
- 1 can chick peas
- 1 Tbsp lemon juice
- 2 tsp ginger, grated
- 1 tsp cumin
- 1 tsp curry powder
- 1 tsp coriander
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp peanut butter
- 1 Tbsp fresh cilantro
Directions

Saute oil, onion, celery, green pepper and garlic.

Add all remaining ingredients except for peanut butter and cilantro.

Simmer covered 20 minutes.

Stir in peanut butter and cilantro.

Simmer 5 minutes more.
