Black Bean Soup

Serves 2 people

Ingredients
- 2 green onions, chopped
- 1 clove garlic, chopped
- 2 tsp oil
- 1 tsp fresh ginger, chopped
- 1/2 tsp cumin seeds
- 1/3 cup grated carrot
- 1 15-ounce can black beans, rinsed, drained
- 1 cup vegetable broth
- 1 bay leaf
- Hot sauce
Directions

Combine onion, garlic, oil, ginger and cumin seeds.

Microwave on medium for 1 minute.

Add carrot, beans, broth, bay leaf and microwave on high for 4 minutes, stirring after 2 minutes.

Remove bay leaf.

Remove 1/2 cup of beans with slotted spoon; reserve.

Puree till smooth.

Re-add reserved beans and add hot sauce.

Garnish green onion and carrot.
