Grilled Thai Beef and Noodle Salad

Also good with soba noodles.
Prep time: 40 minutes
Cook time: 25 minutes
Serves 8 people
Ingredients
- 1 1/2 lb (750 g) flank steak
- 2 Tbsp soy sauce
- 2 Tbsp hoisin sauce
- 1 tsp sesame oil
- 1 tsp hot chili paste
- Dressing:
- 2 Tbsp rice vinegar
- 2 Tbsp fish sauce
- 2 Tbsp lemon or lime juice
- 1 Tbsp sugar
- 1 clove garlic, minced
- 1 Tbsp ginger, minced
- 1/2 tsp salt
- 1/4 cup oil
- 1 pkg (350 g) pre-cooked chow mein noodles
- Half an English cucumber, sliced lengthwise and then thinly sliced
- 2 small carrots, sliced diagonally
- 1 red pepper, julienned
- 4 green onions, sliced diagonally
- 1/4 cup fresh cilantro
Directions

Score both sides of steak with knife, cutting across the grain.

Combine soya and hoisin sauces, sesame oil and chili paste.

Place in zip lock bag with steak, seal and marinate for 2-8 hours in fridge.

Oil grill lightly and preheat well.

Stir together rice vinegar, fish sauce, lemon juice, sugar, garlic, ginger, salt and oil until sugar dissolves.

Cook noodles according to package.

Drain noodles and place in large bowl.

Add cucumber, carrots, red pepper and green onion.

Sear steak on high for 2 minutes per side.

Reduce heat to medium and cook until medium-rare, 10-15 minutes.

Let meat rest for a few minutes.

Slice meat very thin across the grain.

Add steak to noodles and vegetables.

Add cilantro.

Pour dressing over all and toss well.

Serve warm.
