Thai Rice Pudding

Ingredients

  • 1-1/2 cup jasmine rice
  • 1/2 cup sugar
  • 2 cup water
  • 3/4 cup coconut milk
  • 1 cinnamon stick

Directions

  1. Combine all ingredients in saucepan.

  2. Start temperature hot to quickly dissolve sugar, then reduce heat, stirring constantly.

  3. Once heat is reduced, stir occasionally.

  4. Simmer until rice is tender (not too fast).

  5. Most of liquid should be absorbed (a little liquid at bottom is ok, just not soupy).

  6. Put in large, shallow dish and cool.

  7. Serve with mango.
