Perogis

(from deejp’s recipe box)

Serves 6 people

Ingredients

  • 6 cups mashed potatoes
  • 1 small onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup sour cream
  • 1/2-1 cup grated chddar
  • Dough:
  • 2 cups flour
  • 1 tsp salt
  • 2 egg yolks
  • 1/2 cup water

Directions

  1. Combine filling ingredients and refridgerate over night.

  2. Add enough water to make a medium-soft dough.

  3. Divide dough in two, cover and let stand 10 minutes.

  4. Roll dough thinly on floured board.

  5. Cut into 3" squares.

  6. Place heaping tsp of filling each square.

  7. Fold diagonally (corner to corner).

  8. Place uncooked perogis on tea towel and cover.

  9. Boil large pot of water to rolling.

  10. Add 10 perogis and stir gently for 3 minutes.

  11. When cooked, they rise to the top of the water.

  12. Drain.

  13. Toss with butter (opt)
