Pork Chop Supper

Good when cooked with wine and worstecheshire sauce, although this modifies mom’s recipe slightly.

Serves 4 people

Ingredients

  • 1 Tbsp olive oil
  • 3 port butt chops
  • 2-1/4 cup beef broth
  • 1 cup water
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 4 potatoes, 1/" slices
  • 8 carrots, chopped
  • 1/2 tsp thyme
  • 1 Tbsp parsley
  • Optional:
  • substitue 1/2 water with 1/2 red wine
  • Worstecheshire sauce

Directions

  1. Heat oil and cook chops for 4 minutes each side until browned.

  2. Spoon off all but 3 Tbsp of oil.

  3. Add remaining ingredients.

  4. Cover and cook low 35 minutes.
