Leek and Potatoe Soup

Ingredients

  • 2 medium leeks
  • 3 medium potatoes
  • 4 cups water
  • 4 cups milk
  • 1/4 cup chicken stock
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp dry parsley
  • 1/4 tsp white pepper
  • 1/4 tsp salt
  • 1/2 Tbsp olive oil
  • 1 cup flour
  • 1 cup butter, melted

Directions

  1. Slice leek down middle, then quarter.

  2. Wash and dry leek.

  3. Dice leek and place in medium saucepan with S&P and a little oil.

  4. Saute until transparent.

  5. Add water, milk,stock and remaining seasoning.

  6. Slowly bring to boil.

  7. In separate pot, boil potatoes.

  8. In another pot, place butter and simmer.

  9. Add flour slowly until butter thickens.

  10. Remove from heat and stir until smooth.

  11. Drain potatoes and add to leek mixture.

  12. Add butter and flour mixture.

  13. Simmer low until thick.
