Ingredients
- 1 cup barley
- 6 cups water
- 1/4 tsp salt
- 2 cups corn
- 1/2 cup onion, finely chopped
- 1 red pepper, chopped
- 1/2 cup parley, fresh
- 1/2 cup olive oil
- 2 Tbsp lemon juice
- 2 Tbsp umoboshi vinegar (plum)
Directions

Rinse barley.

Boil water and salt and barley.

Simmer 30-40 minutes.

Drain and rinse.

Combine all ingredients.
