Ingredients
- 4-6 chicken thighes, boneless, skinless
- 1 Tbsp olive oil
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 onion, chopped
- Handful dried shitake mushroom, soaked in warm water to soften, chopped
- 1/2 cup white wine
- 1/2 cup chicken stock
- 1 clove garlic, minced
- 1 can mushroom soup
- 1 tsp dried thyme
- S&P
- Worchestshire sauce
- 1/2 tsp dill
- 1/2 tsp mint
Directions

Brown chicken thighes with olive oil.

Add celery, carrots, onion, shitake and garlic; saute to soften.

Add wine and stock, cut chicken into smaller pieces.

Add soup and remaining spices.

Simmer 30-40 minutes.
