Peanut Brittle

Ingredients

  • 1-1/1 cup sugar
  • 1/2 cup corn syrup
  • 1/2 cup water
  • 1-1/2 cup salted peanuts
  • 2 Tbsp margerine
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla

Directions

  1. Butter cookie sheets.

  2. Combine sugar, syrup and water in a 2L saucepan.

  3. Stir until sugar melts.

  4. Boil with minimum stirring to 138 C.

  5. Add peanuts and margarine.

  6. Stir continuously to 152 C.

  7. Remove from heat.

  8. Add soda and vanilla quickly.

  9. Pour and spread onto buttered sheets.
