Lunar Rhubarb Cake

Ingredients

  • Batter:
  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1 cup chopped rhubarb
  • 1 Tbsp flour
  • Topping:
  • 1/8 cup butter
  • 1 tsp cinnamon
  • 1/2 cup brown sugar

Directions

  1. Cream butter and sugar.

  2. Beat in egg and vanilla.

  3. Sift together flour, soda and salt.

  4. Mix dry mixture into butter mixture alternatively with buttermilk (3 dry, 2 wet).

  5. Toss rhubarb with flour and add.

  6. Blend topping ingredients together and sprinkle over batter in 13 × 9″ pan.

  7. Bake 350 F for 35-45 minutes.
