Oriental Style Lamb Meatballs

Ingredients

  • 1 lb. ground lamb
  • 1/4 cup dry bread crumbs
  • 1 egg
  • 1 clove garlic, minced
  • 1/4 tsp pepper
  • 1 Tbsp olive oil
  • 1 large onion, quartered
  • 2 large carrots, thinly sliced
  • 1 green pepper, cut in bite-size chunks
  • 1/2 cup brown sugar
  • 1 Tbsp cornstarch
  • 1/3 cup strong vegetable or chicken broth
  • 1/4 cup white vinegar
  • 1 Tbsp soy sauce

Directions

  1. In a medium bowl mix lamb, bread crumbs, egg, garlic and pepper

  2. Form into medium size meatballs.

  3. In large skillet heat oil over medium-high heat and evenly brown meatballs.

  4. Drain off excess fat.

  5. Add onion, carrot and green pepper.

  6. Cook and stir about 5 minutes or until carrot is tender-crisp.

  7. In a small bowl mix sugar, cornstarch, broth, vinegar and soy sauce until smooth.

  8. Stir into meatball mixture and cook stirring constantly until thickened.

  9. Serve over cooked rice.
