Bhajia

Ingredients

  • 1 large onion, chopped
  • 1/8 to 1/4 cup oil
  • 1 tomatoe, finely chopped
  • 1/2-3/4 tsp bhajia powder
  • Salt, to taste
  • 1 Tbsp ginger, minced
  • 1 Tbsp garlic, minced
  • 1/2 tsp mild curry paste
  • 3-4 potatoes, small cubes
  • 1/4 cup peas

Directions

  1. Cook onion in oil until very dark in colour.

  2. Add a little water and simmer until onion plump up.

  3. Add tomatoe and simmer until softened.

  4. Add a little more water and bhajia powder, salt, ginger, garlic and curry paste.

  5. Cook well, stirring occasionally, 5 minutes.

  6. Add potatatoe cubes and stir and brown well so that potatoe absorbs flavours.

  7. Top with water, add peas and simmer 10-20 minutes.
