Ingredients
- 1 Tbsp butter
- 1 small onion, chopped
- 1/2 medium eggplant, peeled, cut in 1" cubes
- 2 tomatoes, peeled and cut in 8
- 1/2 tsp salt
- 1-1/2 tsp brown sugar
- Dash pepper
- 1/4 tsp oregano
- 1/2 cup cheddar cheese, grated
- 1/4 cup bread crumbs, soft
- 1 Tbsp butter
Directions

Saute onion in melted butter until transparent.

Combine eggplant, tomatoe and next 4 ingredients.

Place in shallow greased baking dish.

Combine crumbs and cheese.

Sprinkle on casserole and dot with butter.

Bake at 375 F approx. 45 minutes until tender.
