Ingredients
- 1 can black beans (19 fl oz)
- 1-1/2 cup corn kernels, frozen thawed or can
- 1 small green pepper, diced
- 1 small jalapeno pepper, minced
- 1/3 cup red onion, diced
- 1/3 cup green onion, chopped
- 1/3 cup cilantro, chopped
- 1/4 cup veg. oil
- 2 Tbsp red wine vinegar
- 1/2 tsp cumin
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 clove garlic, minced
- 8 cherry tomatoes, halved
Directions

In large bowl, combine corn, peppers, onions, cilantro and black beans.

In small bowl, whisk together oil, vinegar, cumin, sugar, S&P and garlic; pour over bean mixture, tossing to coat.

Refrigerate covered.

Add tomatoes before serving.
