Lentils and rice with carmelized onion

Serves 2 people

Ingredients

  • 1/2 cup long grain brown rice
  • 1 cup dried green or yellow lentils, rinsed
  • 1 onion, coarsely chopped
  • Salt, to taste
  • 2-3 Tbsp oil

Directions

  1. Heat oil.

  2. Cook onion in oil until carmelizede (dark brown).

  3. In large pot combine rice, lentils and onion.

  4. Add 4-5 cups water.

  5. Bring to boil, then reduce heat and simmer until water absorbed and lentils soft.

  6. Stir occassionally, add more water if necessary.

  7. Season with salt to taste.
