Ingredients
- 227 g wide rice noodles
- 2 Tbsp oil
- 6 oz. lean ground pork
- 1 red pepper, sliced
- 3 cloves garlic, minced
- 1/4 tsp hot pepper flakes
- 6 oz (175g) raw shrimp
- 1/3 cup chicken stock
- 3 Tbsp fish sauce
- 2 Tbsp sugar
- 2 Tbsp lime juice
- 2 Tbsp ketchup
- 1 egg
- 2 cups bean sprouts
- 2 green onion, chopped
- 1/4 cup fresh coriander, chopped
- 2 Tbsp peanuts, chopped
Directions

Soak noodles in warm water 15 minutes and set aside.

In wok, stir fry oil, pork, red pepper, garlic and hot pepper flakes 2 minutes.

Add shrimp and stir fry 1 minute.

Combine chicken stock, fish sauce, sugar, lime juice and ketchup.

Stir into above ingredients and stir fry 1 minute.

Add noodles and toss.

Drizzle with egg, tossing until it sets.

Add bean sprouts and toss.

Sprinkle with green onion, coriander and peanuts.
