Beef Vegetable Soup (Austrian)

Ingredients

  • 1 lb beef bones
  • 2 lbs stewing beef
  • 3 Tbsp oil
  • 12 cups water
  • 1 tsp salt
  • 1 tsppepper
  • 1 tsp teak spice
  • 1 large onion, thinly sliced
  • 2 medium leeks, sliced
  • 2 carrots, thinly sliced
  • 1 stalk celery, chopped
  • 3 small turnips, cubed
  • 2 cups cauliflower, cut up
  • 4 sprigs parsley
  • 2 medium bay leaves
  • 1/2 tsp dried thyme

Directions

  1. In pot heat oil over med-high heat.

  2. Add beef, brown on all sides.

  3. Add bones and water and S&P.

  4. slowly bring to simmer and skim off any scum from the top.

  5. Reduce heat to med-low and cook, partly covered, 1-1/2 hours; skim again.

  6. Add onions, leeks, carrots, celery, turnips, cauliflower, parsley, bay leaves and thyme.

  7. Continue cooking until vegetables and beef are tender, about 40 minutes.

  8. Remove parsley sprigs and bay leaves and bones.

  9. Add steak spice.
