Lamb Chops with Vegetables

Ingredients

  • Lamp chops
  • 1/4 tsp pepper
  • 2 tsp salt
  • 3 Tbsp flour
  • 1/4 cup oil
  • 3 medium carrots, sliced
  • 1 large onion, diced
  • 1 large celery stalk, sliced
  • 1 clove garlic, minced
  • 1/2 cup dry red wine
  • 2 tomatoes, chopped
  • 1 beef bouillon cube
  • 1 bay leaf
  • 1/2 tsp thyme
  • 1/2 tsp allspice

Directions

  1. Sprinkle chops with S&P and coat well with flour.

  2. In skillet over medium-high heat, heat oil and cook chops until browned on both sides.

  3. Remove chops.

  4. Over medium heat cook carrots, onion, celery and garlic for 5 minutes, sitrring occasionally.

  5. Add wine and remaining ingredients and an additional tsp of salt.

  6. Add chops and heat to boiling.

  7. Reduce heat to low, cover and simmer 50 minutes or until chops are tender, turning once.

  8. Remove chops and thicken juices.
