Ingredients
- 2 tb Sweet paprika
- 2 1/2 ts Salt (I usually use 30%-50% of this)
- 1 ts Onion powder
- 1 1/2 ts Garlic powder
- 1 1/2 ts Cayenne pepper (I usually cut this quite a bit for my audience)
- 2 ts Lemon pepper
- 1 ts thyme
- 1 1/2 ts basil

For the

fish, I usually melt some butter and mix it with olive oil (1 or 2: 1) in

a plate. Coat the fish in the fat and coat liberally with the spice mix.

Heat up a cast iron skillet/griddle for at least 10 minutes or so. Throw

the fish on the skillet and stand back.
